  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 4 cups potatoes, diced
  • 2 cups cheddar cheese, shredded
  • 1 cup milk
  • 1 cup carrots, diced

Preparation

  • In a slow cooker, brown the ground beef with the onion and garlic. Drain excess grease.
  • Add the beef broth, potatoes, carrots, and season with salt and pepper. Stir to combine.

Cooking

  • Cover and cook on low for 6-7 hours or high for 3-4 hours.
  • About 30 minutes before serving, stir in the milk and cheddar cheese.
  • Cook until cheese is melted and soup is heated through.

Serving

  • Serve warm, topped with bacon bits and green onions if desired.

Notes

To store leftover soup, let it cool to room temperature. Then, place it in an airtight container and store it in the refrigerator for up to 3 days. For longer storage, freeze the soup in freezer-safe containers for up to three months. Thaw in the fridge overnight before reheating.
