  • 4 medium medium-sized russet potatoes (washed and scrubbed)
  • 2 tablespoons olive oil Rubbed on the potatoes for crispy skin.
  • Salt (to taste)
  • Black pepper (to taste)

For the toppings

  • sour cream
  • grated cheese

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Use a fork to prick each potato a few times; this allows steam to escape while baking.
  • Rub each potato with olive oil, then sprinkle generously with salt and black pepper.

Baking

  • Place the potatoes directly on the oven rack or on a baking sheet for 45-60 minutes. Turn them halfway through for even cooking.
  • You’ll know they’re done when a knife easily pierces the center.

Serving

Notes
