Brownie Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup Greek yogurt (plain) Can substitute with non-dairy yogurt.
  • 1/2 cup unsweetened applesauce
  • 1/2 cup sugar substitute (like stevia or erythritol)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional) Can be omitted for a lighter version.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine Greek yogurt, applesauce, eggs, and vanilla extract. Mix until smooth and creamy.
  • In a separate bowl, whisk together the cocoa powder, sugar substitute, baking soda, and salt until well mixed.
  • Gradually fold the dry ingredients into the wet mixture, stirring until just combined. Do not overmix.
  • If using chocolate chips, gently fold them into the batter.
  • Line an 8x8-inch baking pan with parchment paper or grease lightly.
  • Pour the brownie batter into the prepared pan and spread it out evenly.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the brownies cool completely in the pan before cutting them into squares.

Notes

Store brownies in an airtight container at room temperature for up to 3 days or in the fridge for up to a week. Reheat in the microwave for a few seconds before serving for optimal taste.
