Ingredients
  

For the Pralines

  • 1 cup granulated sugar
  • ½ cup unsalted butter
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract (alcohol-free)
  • 1 ½ cups chopped pecans Can substitute with almonds or walnuts
  • a pinch salt

Instructions
 

Preparation

  • Line a baking sheet with parchment paper.

Cooking

  • In a saucepan, combine granulated sugar, heavy cream, and butter. Stir over medium heat until boiling.
  • Allow to boil for about 5 minutes, stirring continuously, until reaching the soft-ball stage (around 235°F / 113°C).
  • Remove from heat, stir in vanilla extract, chopped pecans, and a pinch of salt until well combined.

Shaping

  • Drop dollops of the mixture onto the prepared baking sheet, giving each space to spread.

Cooling

  • Allow to cool at room temperature for at least 30 minutes until firm.

Serving

  • Serve immediately or store in an airtight container.

Notes

Store in an airtight container at room temperature for up to two weeks. For longer storage, freeze separated by parchment paper.
