  • 1 pound ground beef Opt for lean ground beef for less grease.
  • 2 cups mixed bell peppers, sliced Feel free to use your favorite colors.
  • 1 cup broccoli florets
  • 2 cups cooked rice White or brown rice works well.

Sauce and Seasoning

  • 1/4 cup teriyaki sauce Store-bought or homemade.
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated (optional) Adds extra flavor.

Garnish

Preparation

  • Cook the rice according to package instructions and set aside.

Cooking

  • In a large skillet or wok, heat the sesame oil over medium heat.
  • Add the ground beef, breaking it up with a spatula, and cook until browned, approximately 5-7 minutes.
  • Add minced garlic, ginger, bell peppers, and broccoli to the skillet and sauté for another 4-5 minutes until vegetables are tender-crisp.
  • Pour the teriyaki sauce over the beef and veggies, stirring to combine, and let it simmer for an additional 2-3 minutes.
  • Spoon the teriyaki beef mixture over a bed of cooked rice, garnish with sliced green onions, and enjoy!

Notes

For variations, swap in your favorite vegetables or proteins. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 2 months.
