  • 1 lb chicken breast, sliced into thin strips
  • 2 cups broccoli florets
  • 1/2 cup teriyaki sauce (check for Halal-friendly brands)
  • 2 tablespoons vegetable oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • to taste salt and pepper
  • Cooked rice, for serving

Preparation

  • Begin by slicing the chicken breast into thin strips. Rinse and cut the broccoli into florets.

Cooking

  • In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
  • Add the sliced chicken to the skillet. Season it with salt and pepper, and cook for about 5-7 minutes, or until the chicken is no longer pink and starts to brown.
  • Toss in the minced garlic and ginger, cooking for about 1 minute until fragrant.
  • Add the broccoli florets to the skillet and stir for another 3-4 minutes until they are tender but still bright green.
  • Pour the teriyaki sauce over the chicken and broccoli, stirring to coat everything evenly. Cook for an additional 2 minutes until well combined and heated through.
  • Remove from heat and serve your stir fry over a bed of warm rice. Enjoy!

Notes

For substitutions, swap chicken breast for boneless, skinless chicken thighs. You can also use other veggies like bell peppers or snap peas. Store leftovers in an airtight container for up to 3 days or freeze for up to a month. Reheat on the stovetop over low heat with a splash of water or chicken broth.
