Ingredients

  • 1 lb ground chicken or turkey (or beef)
  • 1 packet taco seasoning
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can corn kernels 15 oz, drained
  • 1 jar salsa 16 oz
  • 1 cup sour cream
  • 2 cups shredded Mexican cheese blend
  • 6 large flour tortillas
  • 1 can diced tomatoes with green chilies 10 oz, optional for extra spice
  • fresh cilantro chopped, for garnish
  • green onions sliced, for garnish
  • diced avocado optional topping
  • jalapeños optional topping
  • extra sour cream optional topping
  • shredded lettuce optional topping

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the ground meat until browned and cooked through, about 5-7 minutes. Drain any excess fat, if necessary.
  • Stir in the taco seasoning according to the packet instructions, then add the black beans, corn, and diced tomatoes (if using). Let the mixture simmer for 5 minutes.
  • In a 9×13-inch baking dish, spread a small amount of salsa on the bottom to prevent sticking. Place two tortillas to cover the bottom of the dish. Spread a portion of the meat mixture over the tortillas, followed by a layer of sour cream and a sprinkle of shredded cheese. Repeat this layering process (tortillas, meat, sour cream, cheese) until all ingredients are used, finishing with a layer of cheese on top.
  • Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and melted. Remove the foil for the last 5 minutes of baking to allow the cheese to lightly brown.
  • Remove from the oven and let the taco lasagna rest for 5 minutes before slicing. Garnish with fresh cilantro and green onions. Serve with your favorite toppings like avocado, jalapeños, or extra sour cream.
