Main Ingredients

  • 1 pound ground beef (or ground turkey for a lighter option) You can use ground turkey for a lighter option.
  • 1 packet taco seasoning Use according to package directions.
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 2 cups salsa Choose mild, medium, or hot based on preference.
  • 3 cups tortilla chips
  • 2 cups shredded cheese Cheddar or a Mexican blend works well.

Optional Toppings

  • to taste sour cream
  • to taste guacamole
  • to taste diced tomatoes
  • to taste green onions
  • to taste chopped cilantro

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat if needed.
  • Mix the taco seasoning into the cooked meat according to package directions, typically adding water and letting it simmer for a couple of minutes until combined.
  • In a 9x13 inch baking dish, spread half of the tortilla chips on the bottom. Layer the seasoned meat, black beans, corn, and salsa over the chips. Top with the remaining tortilla chips.
  • Sprinkle the cheese generously on top of the layered ingredients.

Baking

  • Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
  • Allow the casserole to cool slightly, then top with your favorite garnishes like sour cream, guacamole, or fresh cilantro before serving.

Notes

For best results, store leftovers in an airtight container for up to 3 days. Reheat in the microwave or in a preheated oven at 350°F (175°C) until warmed through.
