  • 1/2 teaspoon salt
  • 1 cup strawberries, diced (fresh or frozen) If using frozen, ensure they are thawed and well-drained.
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter and white sugar until light and fluffy—this should take about 2-3 minutes.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the creamed butter and sugar, blending until combined.
  • Gently fold in the diced strawberries and vanilla extract, ensuring an even distribution throughout the dough.
  • Using your hands or a cookie scoop, form small balls of dough and place them on a parchment-lined baking sheet, leaving enough space between them.

Baking

  • Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden. The cookies should be soft in the middle.
  • Once done, remove from the oven and let cool for a few minutes. Dust with powdered sugar if desired, and enjoy.

Notes

To store, keep in an airtight container at room temperature for up to 3-4 days, or freeze for up to 3 months. Thaw at room temperature or warm in the microwave before serving.
