Filling

  • 4 cups Fresh Strawberries, hulled and chopped
  • 1/2 cup Granulated Sugar (for filling) Adjust for sweetness

Batter

  • 1 cup All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1 cup Milk
  • 1/2 cup Unsalted Butter, melted (plus some for greasing)
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Lemon Juice (optional for brightness)
  • 1/2 cup Granulated Sugar (remaining for batter)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) while you prepare your ingredients.
  • In a medium bowl, combine the chopped strawberries and half of the granulated sugar (½ cup). Allow them to sit while you prepare the batter.

Batter Making

  • In another bowl, whisk together the all-purpose flour, baking powder, salt, and the remaining granulated sugar. Then, add in the milk, melted butter, and vanilla extract. Mix until just combined; it’s okay if there are a few lumps!

Baking

  • Use some melted butter to grease a 9x13 inch baking dish. Pour the batter into the dish evenly, and then gently spoon the strawberry mixture on top of the batter.
  • Place the dish in the oven and bake for about 30 minutes or until the top turns golden and the filling is bubbly.

Serving

  • Once out of the oven, let it cool for a few minutes. Serve warm, topped with a scoop of ice cream or a dollop of whipped cream.

Notes

Substitute sugar with alternatives like honey or agave for a more natural sweetness. For a gluten-free option, try using almond flour or a gluten-free flour blend. Keep an eye on the cobbler as it bakes for the perfect golden hue. Avoid overmixing the batter; it should be lumpy for the best texture.
