Easy Strawberry Bread

Easy Strawberry Bread is a wonderfully moist and flavorful quick bread that's filled with fresh strawberries and a hint of vanilla. It's not overly sweet, making it a perfect treat for breakfast, brunch, or a light dessert.

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 1/2 cups fresh strawberries hulled and chopped

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
  • Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Cream Butter and Sugar: In a large bowl, using an electric mixer, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  • Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract.
  • Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the sour cream, beginning and ending with the dry ingredients. Mix until just combined.
  • Fold in Strawberries: Gently fold in the chopped strawberries until evenly distributed.
  • Pour into Pan: Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake the Bread: Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool the Bread: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
