Ingredients

For the Steak

  • 1 pound Steak (sirloin, ribeye, or filet mignon) Choose a well-marbled cut for best flavor.
  • 2 tablespoons Butter Optional, enhances flavor.
  • Salt To taste.
  • Black pepper To taste.
  • Fresh herbs (thyme or rosemary) Optional, for garnish.

For the Frites

  • 2 large Potatoes (russet or Yukon Gold) Cut into thin strips resembling fries.
  • 2 tablespoons Olive oil For frying.

Instructions

Preparation

  • Peel the potatoes and cut them into thin strips, resembling fries. Rinse them under cold water to wash away excess starch, then pat them dry with a kitchen towel.

Cooking the Frites

  • In a large pot or deep fryer, heat oil over medium-high heat to 350°F (175°C).
  • Carefully add the potato strips in batches, frying until they are golden brown and crispy, about 5-7 minutes. Remove and let them drain on paper towels. Season with salt while still hot.

Cooking the Steak

  • While the fries are frying, heat a skillet over high heat. Season the steak generously with salt and pepper.
  • Once the skillet is hot, add the steak and cook to your desired doneness (around 4-5 minutes per side for medium-rare). If desired, add butter and fresh herbs to the pan during the last minute.

Serving

  • Let the steak rest for about 5 minutes, then slice it against the grain into strips for tenderness.
  • Plate the crispy fries along with the sliced steak, garnishing with fresh herbs if desired.

Notes

For a complete meal, pair with a crisp salad or steamed vegetables. A nice Bordeaux wine complements this dish beautifully.
