Pasta Ingredients

  • 200 g pasta (spaghetti or penne) Use your preferred pasta type.
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes Add more for extra heat.
  • 400 g crushed tomatoes
  • to taste Salt
  • Fresh basil leaves, for garnish
  • Grated Parmesan cheese, for serving

Instructions
 

Cooking the Pasta

  • Start by boiling a pot of salted water. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Once cooked, reserve a cup of pasta water and then drain the rest.

Preparing the Sauce

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant but not browned.
  • Stir in the red pepper flakes and continue to sauté for about 30 seconds, allowing the flavors to bloom.
  • Pour in the crushed tomatoes, then season with salt to taste. Stir the mixture well and let it simmer for about 10 minutes, enabling the flavors to meld together.

Combining and Serving

  • Add the cooked pasta to the sauce in the skillet, tossing to coat evenly. If the sauce seems too thick, gradually add some reserved pasta water until you reach your desired consistency.
  • Plate the pasta, garnishing with fresh basil leaves and a generous sprinkling of grated Parmesan cheese. Enjoy your spicy masterpiece!

Notes

Store leftovers in an airtight container for up to 3 days. To reheat, warm on low heat with a splash of water, or microwave in short bursts. Can freeze for up to one month, thaw in refrigerator before reheating.
