  • 3-4 lbs beef roast Opt for chuck roast for maximum tenderness.
  • 4 cups onions, sliced Yellow or Vidalia onions are recommended for sweetness.
  • 4 cups beef broth Use low-sodium broth if preferred.
  • 2 tablespoons Worcestershire sauce
  • 4 cloves garlic, minced
  • 2 teaspoons dried thyme
  • Salt and pepper, to taste
  • 1 cup shredded Gruyère cheese For topping.
  • Fresh parsley, chopped For garnish.

Preparation

  • Start by slicing your onions and mincing the garlic. This can be done a day ahead to save time.
  • In a hot skillet, sear the beef roast on all sides until it’s nicely browned.
  • Transfer the seared roast to your slow cooker. Add in the sliced onions, garlic, thyme, Worcestershire sauce, salt, and pepper. Pour the beef broth over the top.

Cooking

  • Cover and set your slow cooker to low. Let it cook for 8-10 hours or until the beef is fork-tender.

Serving

  • When you’re ready to serve, ladle the sauce over the roast, sprinkle shredded Gruyère cheese on top, and let it melt.
  • Garnish with fresh parsley before serving.

Notes

For perfect results, opt for a good cut of meat, and don’t rush the searing process. You can speed up cooking time by using the high setting on your slow cooker for 4-6 hours.
