Main Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cups cooked rice (white or brown) Cook according to package instructions
  • 1 avocado, sliced
  • 1 cup cucumber, diced
  • 1 carrot, julienned

Spicy Mayo Ingredients

  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha sauce
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Green onions for garnish

Preparation

  • Cook your rice according to the package instructions. You can use a rice cooker, stovetop, or even leftover rice.
  • In a small bowl, combine the mayonnaise, sriracha sauce, and lime juice. Mix until well blended, and adjust the spice level according to your preference.

Cooking

  • In a skillet over medium heat, add a splash of oil. Once hot, add the shrimp, season with salt and pepper, and cook for 2-3 minutes on each side until they turn pink and opaque.

Assembly

  • In serving bowls, layer the cooked rice first. Top with the sautéed shrimp, followed by sliced avocado, diced cucumber, and julienned carrots.
  • Finish it off with a generous drizzle of your homemade spicy mayo and garnish with chopped green onions.

Notes

If you prefer a different protein, feel free to swap shrimp for chicken or tofu. Have all your ingredients prepped before you start cooking to make the process seamless. Avoid overcooking the shrimp to maintain their texture.
