  • 1 lb ground beef (or ground lamb for a traditional touch) Use ground turkey for a lighter version if desired.
  • 1 cup carrots, diced
  • 1 cup peas (frozen works well)
  • 1 cup onion, chopped
  • 2 cups mashed potatoes Store-bought or leftovers work.
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce (optional)
  • to taste Salt and pepper
  • Olive oil for cooking A splash to cook the meat.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Heat a splash of olive oil in a large skillet over medium heat, then add the ground beef, cooking until browned. Don't forget to break it up with a spatula!
  • After the meat is cooked through, toss in the chopped onions and diced carrots. Cook these together for about 5 minutes, until the onions are translucent.
  • Stir in the peas, tomato paste, Worcestershire sauce, salt, and pepper. Pour in the beef broth and let the mixture simmer for about 10 minutes until it's slightly thickened.
  • Transfer the meat mixture into a baking dish. Evenly spread your creamy mashed potatoes on top, making sure to cover the filling completely.
  • Pop your Shepherd's Pie in the oven and bake for about 20 minutes, or until the top is golden brown. If you like a little extra crunch, broil it for the last few minutes.
  • Let it cool for a few minutes before serving. Enjoy your hearty meal with a sprinkle of fresh herbs on top if desired!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat in the oven or microwave.
