Ingredients
  

Main Ingredients

  • 1 pound kielbasa, sliced into rounds
  • 2 cups bell peppers, chopped (mix of colors)
  • 1 cup zucchini, sliced
  • 1 cup red onion, sliced

Seasonings

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • to taste salt and pepper

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Slice kielbasa and chop the vegetables; place them in a large bowl.
  • Drizzle olive oil over the kielbasa and veggies. Sprinkle garlic powder, smoked paprika, salt, and pepper on top. Toss to coat.
  • Spread the mixture onto a large sheet pan in an even layer.

Cooking

  • Bake for about 20-25 minutes until vegetables are tender and caramelized, and kielbasa is heated through.
  • Remove from oven and allow to cool for a few minutes before serving.

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for 2-3 months. Reheat in the oven or microwave.
