Main Ingredients

  • 1 cup pancake mix
  • 1 cup water
  • 1 cup cooked sausage, crumbled (use halal beef or chicken sausage) Use turkey or chicken sausage for a lighter version.
  • 1 cup shredded cheese (cheddar or mozzarella) Both cheddar and mozzarella work well.
  • Cooking spray To grease muffin tin.

Preparation and Baking

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine the pancake mix and water until a smooth batter forms.
  • Fold in the crumbled sausage and shredded cheese until evenly distributed.
  • Lightly grease a mini muffin tin with cooking spray.
  • Scoop the batter into the muffin tin, filling each cup about 2/3 full.
  • Place the muffin tin in the preheated oven and bake for 10-12 minutes or until golden brown on top.
  • Remove from the oven, let them cool for a few minutes, then pop them out of the tin.

Notes

For added excitement, consider adding diced bell peppers or using different types of sausage. Store in an airtight container for up to 3 days in the fridge or freeze for up to 3 months.
