  • 12 oz pasta (such as penne or rigatoni)
  • 1 lb sausage (Italian or Halal option)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 can 14 oz diced tomatoes
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Preparation

  • Begin by boiling a large pot of salted water. Cook your pasta according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the sliced onions and bell peppers. Sauté for about 5-7 minutes until they start to soften.
  • Remove the casing from the sausage and add it into the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  • Stir in the minced garlic and cook for an additional minute until fragrant.
  • Pour in the diced tomatoes (with juices) and season with salt and pepper. Let simmer for another 5 minutes.
  • Toss the drained pasta into the skillet, mixing everything well to combine. Cook for another minute or so to ensure everything is heated through.
  • Garnish with fresh basil or parsley as desired, and enjoy!

Notes

For substitutions, you can use grilled chicken or shrimp instead of sausage, ensuring the meat is Halal. Store leftovers in an airtight container for up to 3-4 days, or freeze for 1-2 months.
