  • 14.75 oz Canned Salmon, drained and flaked
  • 1 cup Breadcrumbs, plain or seasoned
  • 1 large Egg, beaten
  • 2 Green Onions, finely chopped
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Lemon Juice, fresh Best when fresh
  • 0.5 teaspoon Salt
  • Black Pepper, to taste
  • Olive Oil, for frying

Preparation

  • Drain the canned salmon and flake it into a large mixing bowl.
  • Add the breadcrumbs, beaten egg, chopped green onion, Dijon mustard, lemon juice, salt, and pepper to the bowl.
  • Gently combine all the ingredients until just mixed. Avoid overworking the mixture to keep the patties light and fluffy.
  • Shape the mixture into small patties, about 2 inches wide and ½ inch thick.
  • In a large skillet, heat olive oil over medium heat until shimmering.
  • Carefully place the patties in the skillet. Cook for about 3-4 minutes on each side or until they are golden brown and crispy.
  • Once cooked, place the patties on paper towels to absorb any excess oil.

Notes

These patties can be served with a variety of sides like fresh salad, steamed vegetables, or on a bun with avocado and tomato. Consider adding a zesty tartar sauce for dipping.
