Ingredients
  

For the sushi rice

  • 2 cups sushi rice Rinsed thoroughly.
  • 2 cups water For cooking the rice.

For the toppings

  • 1 lb fresh salmon, diced Ensure it's sushi-grade.
  • 1 whole avocado, diced Ripe and firm.
  • 4 sheets nori, cut into small squares For wrapping the sushi bites.
  • to taste soy sauce, for serving Optional, for dipping.
  • to taste wasabi, for serving Optional, for dipping.
  • to taste sesame seeds, for garnish Enhances presentation.
  • to taste green onions, for garnish Chopped.

Instructions
 

Prepare the Sushi Rice

  • Rinse two cups of sushi rice under cold water until the water runs clear to remove excess starch.
  • In a medium pot, combine the rinsed rice and water. Let it sit for about 30 minutes.
  • Bring the pot to a boil over medium heat. Once boiling, reduce to low heat, cover, and cook for approximately 15 minutes.
  • Turn off the heat and let the rice sit covered for another 10 minutes.

Make the Crispy Rice

  • Transfer the cooked rice to a large mixing bowl and let it cool slightly.
  • Line a baking tray with parchment paper and spread the rice evenly on the tray, pressing it down firmly.
  • Heat some oil in a non-stick skillet over medium heat, cut the rice layer into squares, and fry until golden brown and crispy (about 3-4 minutes on each side). Drain on paper towels.

Assemble the Bites

  • Cut nori sheets into small squares that are slightly larger than the crispy rice squares.
  • Place a crispy rice square on each piece of nori.
  • Top with a spoonful of diced salmon and avocado, then sprinkle with sesame seeds and chopped green onions.

Serve

  • Arrange the sushi bites on a serving platter, and pair with soy sauce and wasabi for dipping. Enjoy!

Notes

For substitutions, use cooked shrimp or crab if fresh salmon isn’t available. For storage, keep in airtight container in refrigerator and consume within 1-2 days. To reheat, use a toaster oven to restore crunch.
