  • 2 medium yellow squash, sliced into half-moons Aim for 1/4-inch thickness for uniform cooking.
  • 2 tablespoons olive oil Helps achieve a crispy texture.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt
  • to taste Pepper
  • optional Fresh herbs like thyme or rosemary for garnish

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and slice the yellow squash into even half-moon shapes.
  • In a large mixing bowl, combine the sliced squash, olive oil, garlic powder, onion powder, salt, and pepper. Toss until evenly coated.
  • Spread the seasoned squash in a single layer on a baking sheet.

Cooking

  • Roast the squash in the oven for 20-25 minutes, tossing halfway through for even browning.
  • Once golden brown and tender, remove from the oven. Garnish with fresh herbs if desired and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes. For longer storage, freezing is possible, but best enjoyed fresh.
