  • 1 pound Carrots, peeled and cut into even-sized pieces
  • 3 tablespoons Honey
  • 2 tablespoons Olive oil
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper
  • to taste Fresh thyme or rosemary, optional for garnish

Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and cut the carrots into even-sized pieces.
  • In a large bowl, combine the honey, olive oil, salt, and black pepper. Stir well until blended.
  • Toss the cut carrots in the honey mixture until they are thoroughly coated.

Cooking

  • Spread the carrots in a single layer on a baking sheet and roast for 20-25 minutes or until fork-tender and slightly caramelized.
  • Remove from the oven and let them rest for a couple of minutes. If desired, sprinkle with fresh thyme or rosemary before serving.

Notes

For perfectly cooked carrots, ensure they are cut evenly and adjust cooking time depending on size. Leftovers can be stored in an airtight container for up to 3-4 days and reheated in the oven or microwave.
