  • 4 pieces boneless and skinless chicken thighs, cut into chunks
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 piece bell pepper, chopped (any color works)
  • 4 cups chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano

  • 2 tablespoons olive oil

Preparation

  • Season the chicken chunks with salt, pepper, paprika, and oregano in a bowl, ensuring all pieces are well-coated.
  • Heat olive oil in a large pan over medium heat. Add the diced onion and bell pepper, cooking until they soften (about 3-4 minutes). Stir in the minced garlic and cook for an additional minute until fragrant.

Cooking

  • Increase the heat to medium-high and add the seasoned chicken to the pan. Sear until the chicken is browned on all sides, approximately 5-6 minutes.
  • Add the rice to the pan, stirring for a minute to coat it in the oily mixture. Pour in the chicken broth. Bring it to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes or until the rice is fluffy and the chicken is cooked through.
  • Once cooked, fluff the rice with a fork and garnish with fresh cilantro or parsley if desired.

Serving Suggestions

  • Serve hot and enjoy alongside garlic bread or a garden salad.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat in the microwave or on the stovetop, adding a splash of chicken broth if needed.
