Ingredients
  

For the Cupcakes

  • 1.5 cups 1 ½ cups all-purpose flour
  • 1 cups 1 cup granulated sugar
  • 1 teaspoon 1 teaspoon baking soda
  • 1 teaspoon 1 teaspoon salt
  • 1 teaspoon 1 teaspoon cocoa powder
  • 1 cups 1 cup vegetable oil
  • 1 cups 1 cup buttermilk, room temperature Ensure it's at room temperature.
  • 2 large 2 large eggs, room temperature Ensure they are at room temperature.
  • 2 tablespoons 2 tablespoons red food coloring Use gel food coloring for best results.
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 teaspoon 1 teaspoon white vinegar

For the Cream Cheese Frosting

  • 8 oz 8 oz cream cheese, softened
  • 0.5 cups ½ cup unsalted butter, softened
  • 4 cups 4 cups powdered sugar
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 pinch Pinch of salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners and set it aside.
  • In a large bowl, whisk together the flour, sugar, baking soda, salt, and cocoa powder until well combined.
  • In another bowl, mix the oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar until fully integrated.
  • Gradually add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix, or your cupcakes might turn out dense.
  • Scoop the batter evenly into the prepared cupcake liners, filling each about two-thirds full.

Baking

  • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let them cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.

Frosting

  • While the cupcakes cool, beat together the softened cream cheese and butter until smooth and creamy.
  • Gradually add the powdered sugar, vanilla extract, and a pinch of salt until fully incorporated.
  • Once the cupcakes are completely cooled, pipe or spread a generous amount of cream cheese frosting on top of each cupcake.
