Ingredients
  

For the pastry

  • 1 package puff pastry sheets, thawed
  • 1 egg beaten, for egg wash

For the filling

  • 8 oz cream cheese, softened
  • 1 cup fresh raspberries, washed and dried
  • ¼ cup sugar adjust to taste
  • 1 tsp vanilla extract
  • powdered sugar for dusting

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Roll out the thawed puff pastry on a floured surface and cut it into squares, approximately 4 inches in size.
  • In a mixing bowl, blend the softened cream cheese, sugar, and vanilla extract until smooth.

Assembly and Baking

  • Place a tablespoon of the cream cheese mixture in the center of each pastry square. Add a few fresh raspberries on top.
  • Fold each square into a triangle and press the edges together with a fork to seal.
  • Brush the tops with the beaten egg wash and place on a baking sheet lined with parchment paper.
  • Bake for 15-20 minutes or until golden brown.
  • Once baked, remove from the oven and let them cool for a few minutes. Dust with powdered sugar before serving.

Notes

Keep the puff pastry cold before baking. Don’t overfill the pastries to avoid spills. You can experiment with other berries or flavored cream cheese.
