  • 1 cup pumpkin puree canned or fresh
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 pieces eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/4 cup milk for a lovely creamy addition

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan.
  • In a large mixing bowl, combine the pumpkin puree, sugar, and vegetable oil. Mix until well blended, then add the eggs and whisk until smooth.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt.
  • Gradually add the dry ingredients into the wet mixture, stirring just until combined. Gently fold in the milk until the batter is smooth.
  • Pour the batter into the prepared baking pan and spread it evenly.

Baking

  • Bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Optional Toppings

  • Optionally, prepare a simple frosting made from cream cheese and powdered sugar to drizzle on top before serving.

Notes

Make sure to use well-cooked, pureed fresh pumpkin for smooth consistency. Adjust pumpkin pie spice to taste. Store leftovers in an airtight container at room temperature for up to three days.
