Muffin Ingredients

  • 1 cup pumpkin puree Canned or freshly made.
  • 1/2 cup granulated sugar Adjusted to taste.
  • 1/2 cup brown sugar Can substitute with more granulated sugar.
  • 1/2 cup vegetable oil Can substitute with melted coconut oil.
  • 2 large eggs Room temperature for better mixing.
  • 1 teaspoon vanilla extract Optional but enhances flavor.
  • 2 cups all-purpose flour Measure correctly to avoid dense muffins.
  • 1 teaspoon baking powder Leavening agent.
  • 1 teaspoon baking soda Leavening agent.
  • 1 teaspoon cinnamon Can substitute with pumpkin spice mix.
  • 1/2 teaspoon nutmeg Freshly grated for best flavor.
  • 1/2 teaspoon salt Balances sweetness.

Crumb Topping

  • 1/2 cup all-purpose flour To create the crumb texture.
  • 1/4 cup brown sugar Adds sweetness to the topping.
  • 1/4 cup rolled oats For added crunch.
  • 1/4 cup unsalted butter, softened Can use margarine as a substitute.
  • 1 teaspoon cinnamon Enhances flavor of the topping.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  • In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  • In a separate bowl, mix the crumb topping ingredients until crumbly.
  • Line a muffin tin with cupcake liners or grease it and fill each cup with muffin batter about two-thirds full.
  • Sprinkle the crumb topping over the muffin batter.

Baking

  • Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  • Allow to cool for a few minutes, then transfer to a wire rack to cool completely.

Notes

For added flavor, consider mixing in some chocolate chips or chopped nuts into the batter. Measure flour carefully to avoid dry muffins.
