  • 1 package phyllo dough, thawed Keep covered with a damp paper towel to prevent drying out.
  • 8 oz fresh mozzarella cheese, cut into small cubes Goat cheese can be used as a substitute.

  • 1/4 cup fresh basil leaves, finely chopped Can be adjusted according to taste.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Take a sheet of phyllo dough and brush it lightly with olive oil. Layer another sheet on top and brush it again to achieve 3-4 layers for each bite.
  • Trim the phyllo sheets into squares or rectangles, approximately 4x4 inches in size.
  • Place a small cube of fresh mozzarella in the center of each phyllo square. Add fresh basil, salt, and pepper on top. If desired, include a slice of cherry tomato.
  • Fold the corners of the phyllo over the filling to create a pocket. Brush the outside with olive oil.
  • Arrange the phyllo bites on a baking sheet lined with parchment paper and bake for about 15-20 minutes or until golden brown and crispy.
  • Let them cool slightly before serving warm.

Notes

Keep the phyllo dough covered while working, avoid overfilling, and feel free to get creative with toppings.
