  • 1 cup creamy peanut butter use natural for richer flavor
  • 1 cup honey or maple syrup natural sweeteners work best
  • 2 cups rolled oats make sure they're gluten-free if needed
  • 1/2 cup chocolate chips dairy-free, if desired
  • 1 teaspoon vanilla extract optional, but adds depth
  • a pinch salt to enhance the flavors

Preparation

  • Line a 9x9 inch baking pan with parchment paper, leaving some overhang.
  • In a large mixing bowl, combine the creamy peanut butter and honey (or maple syrup). Stir until fully mixed and smooth.
  • Gradually add the rolled oats to your peanut butter mixture. Mix well until the oats are evenly coated.
  • If you’re using vanilla extract, mix it in now. Then, fold in the chocolate chips.
  • Pour your mixture into the prepared pan. Use a spatula to press it down evenly and firmly.
  • Refrigerate for about 1-2 hours, or until firm. Once set, lift the bars out using the parchment paper and cut them into squares or rectangles.

Notes

You can swap honey for agave syrup, and use almond or cashew butter instead of peanut butter. Add chopped almonds or walnuts for more crunch. Store in an airtight container in the fridge for up to a week, or freeze for a couple of months.
