Cookie Dough Ingredients

  • 1 cup unsalted butter, softened Make sure butter is softened to room temperature for easier mixing.
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (semi-sweet or milk chocolate) You can replace with white chocolate chips or add nuts for extra crunch.

Oreo Filling

  • 12 pieces Oreo cookies

Preparation

  • Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar with an electric mixer until light and fluffy (about 2-3 minutes).
  • Add the egg and vanilla extract into the mixture, beating until fully incorporated.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  • Fold in the chocolate chips gently, ensuring an even distribution.

Assembling Cookies

  • Scoop about two tablespoons of the cookie dough and flatten it in your palm. Place an Oreo in the center and encase it with the dough, rolling it back into a ball.
  • Place the cookies on the prepared baking sheets, leaving enough space between each (about 2 inches).

Baking

  • Bake in the preheated oven for 10-12 minutes, until the edges are golden. The center will continue to cook after removing from the oven.
  • Let them cool on the baking sheets for about 5 minutes before moving them to a wire rack to cool completely.

Notes

These cookies can be stored in an airtight container at room temperature for up to five days. For longer storage, consider freezing them! Reheat in microwave for about 10-15 seconds or in an oven at 350°F (175°C) for about 5-7 minutes.
