Ingredients
  

For the Chicken

  • 1 pound boneless chicken breasts, cut into bite-sized pieces You can use chicken thighs for a juicier texture.
  • ¾ cup all-purpose flour
  • 2 large eggs, beaten
  • ½ teaspoon salt Adjust according to taste.
  • ¼ teaspoon black pepper Adjust according to taste.

For the Sauce

  • 1 cup orange juice
  • ½ cup sugar Adjust sweetness to preference.
  • 2 tablespoons soy sauce Ensure it’s halal.
  • 1 tablespoon cornstarch To thicken the sauce.
  • 2 tablespoons water To mix with cornstarch for a slurry.
  • 1 zest of orange For added flavor.

Preparation

  • Season the chicken pieces with salt and pepper. Dredge each piece in flour, shaking off the excess, then dip them in the beaten eggs.

Cooking

  • Heat oil in a pan over medium heat. Once hot, add the chicken pieces and fry until golden brown and cooked through, about 5-7 minutes. Remove from the pan and set aside.
  • In the same pan, add the orange juice, sugar, and soy sauce. Stir and bring to a simmer.
  • Mix the cornstarch and water to create a slurry, then add it to the sauce. Stir until it thickens to your desired consistency.
  • Return the chicken to the pan, tossing it in the sauce until well coated. Add the orange zest for extra zing!
  • Serve the orange chicken over rice or your favorite grain and enjoy!

Notes

For extra flavor, consider marinating your chicken for a bit in soy sauce and orange juice before cooking. Store leftovers in an airtight container in the fridge for up to 3 days; reheat over low heat with a splash of fresh orange juice.
