Easy One Pot Sausage and Rice

  • 1 pound pound of your favorite sausage
  • 1 cup long-grain rice
  • 1 medium onion, diced
  • 1 bell pepper bell pepper, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon paprika
  • Salt and pepper to taste

Optional Garnishes

  • chopped green onions or parsley For garnish

Preparation

  • In a large pot over medium heat, brown the sausage until it’s nicely cooked through, about 5-7 minutes. Remove from the pot and set aside.
  • In the same pot, add the diced onion and bell pepper. Sauté until they are soft, around 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  • Return the sausage to the pot and stir in the rice, allowing it to toast slightly for about a minute.
  • Pour in the chicken broth, then add paprika, salt, and pepper. Stir everything together to ensure the rice is evenly distributed.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 20 minutes, or until the rice has absorbed most of the liquid.
  • Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork and garnish with green onions or parsley, if desired.

Notes

Consider serving a light salad or crusty bread alongside for a balanced meal. Store leftovers in an airtight container and consume within 3-4 days.
