  • 4 pieces boneless, skinless chicken breasts
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • 2 cups cherry tomatoes, halved
  • 1 teaspoon Italian seasoning
  • 1 cup fresh mozzarella cheese, diced or sliced
  • ½ cup fresh basil leaves for garnish

Preparation

  • Preheat your oven to 400°F (200°C).
  • Generously season both sides of the chicken breasts with salt and pepper.
  • In an oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken and sear for about 2-3 minutes on each side until golden brown. Remove the chicken from the skillet and set it aside.
  • In the same skillet, add the halved cherry tomatoes and sprinkle them with Italian seasoning. Stir for about a minute, allowing them to soften a bit.
  • Return the chicken to the skillet, nesting it among the tomatoes.
  • Scatter the mozzarella cheese on top of the chicken and tomatoes.
  • Transfer the skillet to your preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (reaches an internal temperature of 165°F or 74°C).
  • Once done, remove from the oven and sprinkle fresh basil leaves on top before serving.

Notes

To ensure perfect chicken: Choose breasts of the same thickness for even cooking, and keep an eye on baking time to prevent dryness. Use fresh ingredients for best flavor. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 2 months.
