Ingredients
  

For the Crust

  • 10 pieces 10 graham crackers, crushed
  • 5 tablespoons 5 tablespoons unsalted butter, melted

For the Filling

  • 1 cup 1 cup granulated sugar
  • 16 oz 16 oz cream cheese, softened Use room temperature cream cheese for best results.
  • 1 teaspoon 1 teaspoon vanilla extract
  • 2 cups 2 cups heavy cream Whip to stiff peaks.

For the Topping

  • 1 pound 1 pound fresh strawberries, sliced Plus extra for garnish.

Preparation

  • In a bowl, mix the crushed graham crackers and melted butter until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Set aside.
  • In a large mixing bowl, beat the softened cream cheese and sugar until smooth and fluffy. Add the vanilla extract and mix well.
  • In a separate bowl, beat the heavy cream until stiff peaks form. Gently fold this whipped cream into the cream cheese mixture until fully combined.
  • Pour the cheesecake filling into the prepared graham cracker crust. Use a spatula to smooth out the top.
  • Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  • Once the cheesecake is set, garnish with fresh strawberries on top. Serve chilled and enjoy!

Notes

Use room temperature cream cheese for a smoother filling. Don't skimp on chilling time to allow the cheesecake to set properly. Save a few strawberries for garnish to enhance the presentation.
