  • 1 cup old-fashioned oats
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey or maple syrup can adjust sweetness to taste
  • 1/2 cup chocolate chips optional
  • 1 pinch salt
  • to taste optional toppings (nuts, dried fruit, coconut flakes)

Preparation

  • Line a muffin tin with cupcake liners for easy removal or lightly grease them to prevent sticking.
  • In a mixing bowl, combine the old-fashioned oats and a pinch of salt.
  • In another bowl, mix the creamy peanut butter and honey (or maple syrup) until smooth and well combined.
  • Pour the wet mixture into the dry ingredients. Stir well until all the oats are well-coated and the mixture is sticky. If you’re adding chocolate chips, fold them in now.
  • Using a spoon or cookie scoop, evenly distribute the mixture into the prepared muffin cups, pressing down to compact each portion.
  • Place the filled muffin tin in the refrigerator for about 30-60 minutes or until the cups have set.
  • Once hardened, simply peel off the liners and enjoy your No Bake Peanut Butter Oat Cups!

Notes

For variations, try using crunchy peanut butter or almond/cashew butter. These cups can be stored in an airtight container in the fridge for up to one week.
