  • 1 cup crushed graham crackers Use finely crushed for best texture.
  • 8 oz cream cheese, softened Make sure it’s at room temperature for easy mixing.
  • 1/2 cup powdered sugar Adjust according to sweetness preference.
  • 1/4 cup fresh lemon juice About 1-2 lemons.
  • 1 teaspoon lemon zest Freshly grated from the lemon.
  • 1/2 teaspoon vanilla extract Enhances flavor profile.
  • 1/4 cup melted white chocolate Optional, for drizzling.
  • Extra for dusting powdered sugar or coconut flakes For coating truffles.

Preparation

  • In a large bowl, combine the softened cream cheese and powdered sugar. Mix well until creamy and smooth.
  • Pour in the fresh lemon juice, lemon zest, and vanilla extract. Stir until fully incorporated.
  • Gradually fold in the crushed graham crackers until well combined.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  • Once chilled, scoop out small amounts (about a tablespoon) and roll them into bite-sized balls.

Coating

  • If desired, roll the truffles in extra powdered sugar or coconut flakes for a beautiful finish.
  • Alternatively, drizzle melted white chocolate over the truffles.

Serving

  • Place the truffles on a serving plate and enjoy!

Notes

These truffles can be stored in an airtight container in the refrigerator for up to a week, or frozen for longer storage.
