  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • a pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan lightly with butter or non-stick spray.
  • In a mixing bowl, mash the ripe bananas with a fork until smooth.
  • Stir the melted butter into the mashed bananas until well blended.
  • Add the baking soda and salt to the banana mixture. Stir in the sugar, beaten egg, and vanilla extract, mixing until combined.
  • Mix in the flour just until no streaks remain. Be careful not to over-mix, as this can make the bread dense.
  • Pour the mixture into the greased loaf pan, spreading it evenly.
  • Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes before transferring it to a rack. Slice and enjoy!

Notes

For extra flavor, consider adding walnuts, chocolate chips, or a sprinkle of cinnamon. Store wrapped at room temperature for about 3 days or refrigerate for up to a week.
