Ingredients
  

Main Ingredients

  • 1 lb ground beef or turkey Use ground chicken or turkey as a substitute if desired.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced Enhances flavor.
  • 1 cup diced tomatoes Fresh or canned.
  • 1 medium bell pepper, chopped
  • 2 medium potatoes, diced Optional for added bulk.
  • 1 tsp cumin For flavor.
  • 1 tsp chili powder
  • to taste salt and pepper
  • 1/2 cup green peas Optional, add in the last few minutes.
  • Fresh cilantro for garnish Adds freshness.

Instructions
 

Preparation

  • In a large skillet, heat a drizzle of olive oil over medium flame.
  • Add chopped onions and sauté until they become translucent.
  • Toss in the minced garlic and bell pepper, cooking for 2-3 minutes until fragrant.

Cooking

  • Increase the heat and add ground beef or turkey to the skillet.
  • Cook, breaking it up with a wooden spatula until browned, about 5 to 7 minutes.
  • Drain any excess fat.
  • Stir in the diced tomatoes and, if using, the diced potatoes. Bring it to a gentle simmer.
  • Mix in cumin, chili powder, salt, and pepper. Let it simmer for about 15 minutes, until the potatoes are tender, adding water if necessary.
  • In the last few minutes of cooking, stir in green peas and let them heat through.

Serving

  • Once done, remove from heat, garnish with fresh cilantro, and serve hot!

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Can be frozen for up to three months. Reheat on the stovetop over low heat or in the microwave until heated through.
