  • 15 ounces white beans, drained and rinsed Any type of canned white beans works well.
  • 2 cups fresh greens (such as spinach or kale) Feel free to use any seasonal greens.
  • 2 tablespoons olive oil Extra virgin olive oil recommended for flavor.
  • 3 cloves garlic, minced Adjust garlic quantity based on personal preference.
  • 1 teaspoon dried oregano Fresh oregano may also be used, if available.
  • to taste Salt and pepper Season according to your taste.
  • 1 Juice of 1 lemon For a zesty flavor, squeeze fresh lemon juice.

Preparation

  • Start by draining and rinsing the white beans under cold water. Mince the garlic and chop your fresh greens into bite-sized pieces if using.

Cooking

  • In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Toss in the chopped greens and sauté for another 2-3 minutes, until they wilt down.
  • Add the drained white beans to the skillet, along with the dried oregano, salt, and pepper. Stir everything together, letting the beans warm through for about 5 minutes.
  • Remove from heat and squeeze the juice of one lemon over the top. Stir to incorporate all those zesty flavors.

Serving

  • Taste and adjust seasoning if needed. Serve warm, either on its own or alongside some crusty bread.

Notes

For substitutions, chickpeas or lentils work as great alternatives. Be cautious not to overcook the greens to maintain their vibrant color and nutritional value. Store leftovers in the refrigerator for up to 3 days or freeze for up to 1 month.
