Ingredients
  

Wrap Base

  • 4 pieces whole wheat wraps

Vegetable Filling

  • 1 cup hummus for spreading on wraps
  • 1 cup cucumber, sliced
  • 2 medium tomatoes, diced
  • 1 medium red onion, thinly sliced
  • 1 medium bell pepper, sliced any color
  • 1 cup olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • 2 cups lettuce or spinach

Seasoning

  • 1 tablespoon olive oil for drizzling
  • to taste salt and pepper

Preparation

  • Start by laying out all your ingredients on a clean surface.
  • Take each whole wheat wrap and spread about 1/4 cup of hummus evenly across the entire surface.
  • Layer your sliced cucumbers, diced tomatoes, sliced bell peppers, and red onions on one side of the wrap.
  • Sprinkle sliced olives and crumbled feta cheese over the vegetables.
  • Add a handful of lettuce or spinach to each wrap.
  • Drizzle a little olive oil and season with salt and pepper.
  • Carefully fold the sides over the filling, then roll the wrap tightly from the bottom up.
  • Cut the wrapped whole wheat wraps in half and serve immediately, or wrap them in foil for a grab-and-go meal.

Notes

These wraps are best enjoyed fresh but can be refrigerated for up to 2 days. Reheat in a pan or microwave for best results. Feel free to customize with different vegetables or cheese.
