  • 1 cucumber, diced
  • 1 bell pepper (any color), diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Preparation

  • Wash and chop the cucumber, bell pepper, cherry tomatoes, and red onion.
  • In a large mixing bowl, combine the rinsed chickpeas with the chopped vegetables—cucumber, bell pepper, cherry tomatoes, and red onion.

Dressing

  • In a small bowl, whisk together the olive oil, lemon juice, dried oregano, and a sprinkle of salt and pepper.

Assembly

  • Drizzle the dressing over the salad and gently toss everything to combine so that each ingredient is coated with the dressing.
  • Sprinkle the chopped parsley on top and give it one last gentle mix.
