  • 2 pieces ripe mangoes, peeled and diced Choose mangoes that are slightly soft for sweetness.
  • 1 piece red bell pepper, finely chopped
  • 1/2 cup red onion, finely diced
  • 1 piece jalapeño, seeds removed and minced (optional for heat) Adjust quantity based on desired spiciness.
  • 2 pieces limes, juiced
  • 1/4 cup fresh cilantro, chopped Can be substituted with parsley if desired.

Preparation

  • Begin by peeling and dicing the ripe mangoes into small cubes.
  • Finely chop the red bell pepper and red onion, and if using, dice the jalapeño, removing the seeds to control the heat.
  • In a large mixing bowl, combine the diced mangoes, bell pepper, red onion, and jalapeño.
  • Squeeze the juice of two limes over the mixture, and add the chopped cilantro. Stir gently to combine.
  • Season with salt and pepper to taste. Let the salsa sit for about 10 minutes to allow flavors to meld.

Notes

Chill the salsa in the refrigerator for at least 30 minutes before serving for better flavor. This dish is best enjoyed fresh, but can be stored in an airtight container for up to 3 days.
