Easy Mango Sago Dessert

Ingredients
  

Main Ingredients

  • 1 cup sago pearls
  • 2 pieces ripe mangoes, diced Use ripe, sweet mangoes for the best flavor.
  • 1 can (400ml) coconut milk Dairy-free alternative: almond or cashew milk.
  • 1/2 cup sugar Adjust to taste.
  • 1/4 teaspoon salt
  • Water (for cooking sago pearls) 4 cups needed for boiling.

Instructions
 

Prepare the Sago Pearls

  • Rinse 1 cup of sago pearls under cold water until the water runs clear.
  • In a pot, boil 4 cups of water. Once boiling, add the rinsed sago pearls.
  • Stir gently and reduce heat to medium. Cook for about 10-15 minutes until the pearls are translucent. Stir occasionally to prevent sticking.

Cool the Sago

  • Remove the pot from heat and allow the pearls to sit for 10 minutes, covered.
  • Then, drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Coconut Milk Mixture

  • In a separate saucepan, combine 1 can of coconut milk, 1/2 cup of sugar, and 1/4 teaspoon of salt.
  • Heat gently and stir until the sugar dissolves—do not let it boil!

Combine Ingredients

  • In a large bowl, mix the cooked sago pearls with the diced mangoes.
  • Gradually pour the coconut milk mixture over the sago and mango. Stir well to combine.

Serve

  • You can serve the dessert immediately or chill it in the refrigerator for an hour to enhance the flavors.
  • Enjoy your mango sago dessert, garnished with extra diced mango or toasted coconut if desired!

Notes

Sago Cooking: Make sure not to overcook the sago pearls as they can become mushy. Chill for flavor enhancement. Store leftovers in an airtight container in the refrigerator for up to 3 days.
