  • 3 cups cooked, shredded chicken
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup shredded cheese Cheddar works great, but feel free to use your choice.
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper

Preparation

  • Preheat your oven to 350°F (175°C).
  • Shred your cooked chicken into bite-sized pieces and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add broccoli and cauliflower florets, sautéing for about 4-5 minutes until slightly tender.
  • In a separate bowl, combine heavy cream, garlic powder, onion powder, salt, and pepper. Stir until well-mixed.
  • In a large mixing bowl, combine shredded chicken, cooked veggies, and cream mixture. Pour in half the cheese and mix until well combined.
  • Pour the mixture into a greased casserole dish and sprinkle the remaining cheese on top. Bake for 25-30 minutes until bubbly and cheese is golden.
  • Once baked, let it cool for a few minutes before serving.

Notes

Substitutions can include swapping vegetables; zucchini or bell peppers can add a wonderful twist. Different cheeses like mozzarella or pepper jack can enhance the flavor. Avoid overcooking to prevent browning of the cheese.
