  • 4 pieces cod fillets (6 ounces each)
  • 3 tablespoons butter for cooking
  • 2 tablespoons fresh lemon juice use fresh for best flavor
  • 1 teaspoon lemon zest adds extra flavor
  • 2 cloves garlic, minced
  • 1 pinch salt to taste
  • 1 pinch pepper to taste
  • 1 tablespoon fresh parsley, chopped for garnish
  • 1 teaspoon paprika for garnish

Preparation

  • Rinse the cod fillets under cold water and pat them dry with paper towels. Season both sides with salt and pepper.

Cooking

  • In a large skillet over medium heat, melt the butter until bubbly but not browned.
  • Carefully place the seasoned cod fillets into the hot skillet and cook for about 4-5 minutes on one side until golden brown.
  • Flip the fillets gently and add the minced garlic, lemon juice, and lemon zest to the pan. Cook for another 4-5 minutes, basting the fish with the buttery sauce.
  • Once the cod flakes easily with a fork and is opaque throughout, remove from the heat.

Serving

  • Sprinkle the cod with fresh parsley and a pinch of paprika before serving.

Notes

Serve with a zesty salad, roasted asparagus, or garlic mashed potatoes. Store leftovers in an airtight container in the fridge for up to 2 days or freeze for up to 2 months.
