Mug Cake Base

  • 1 tablespoon almond flour Can substitute with other low-carb flours.
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon sweetener (erythritol or your favorite low-carb option)
  • 1/8 teaspoon baking powder
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon water
  • 1/4 teaspoon vanilla extract
  • a pinch salt

Preparation

  • In a microwave-safe mug, combine the almond flour, unsweetened cocoa powder, sweetener, baking powder, and a pinch of salt. Mix thoroughly to ensure there are no clumps.
  • Add the melted butter, water, and vanilla extract to the dry ingredients. Stir well until a smooth batter forms.
  • Microwave the mug on high for about 60 seconds. Keep an eye on it as microwaves can vary in power; you don’t want it to overflow!
  • After microwaving, let the mug cake cool for a moment. It will be hot, so be careful!
  • Serve as is, or top it with low-carb whipped cream or your favorite nuts.

Notes

Microwave times may vary, so adjust as needed. Store leftovers in an airtight container in the refrigerator for 1-2 days and reheat in the microwave for 10-15 seconds.
