Ingredients
  

For the bruschetta topping

  • 2 cups fresh ripe tomatoes, diced Use ripe, in-season tomatoes for best flavor.
  • 1 cup fresh mozzarella cheese, diced
  • 1/4 cup fresh basil leaves, chopped or torn Fresh basil enhances the flavor.
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar (optional) Optional for additional flavor.
  • to taste Salt and pepper Adjust according to preference.

For the bread

  • 1 loaf French or Italian bread, sliced A crusty loaf works best.
  • 1 clove Garlic clove, peeled (for rubbing on bread) This adds depth to the flavor.

Instructions
 

Preparation

  • Dice the fresh tomatoes and mozzarella cheese. Chop the basil leaves and set them aside in a mixing bowl.

Mixing

  • Add the diced tomatoes and mozzarella to the bowl with basil. Drizzle with olive oil and balsamic vinegar (if using), and sprinkle with salt and pepper. Toss everything together gently and set aside.

Toasting the Bread

  • Preheat your oven to 400°F (200°C). Place the sliced bread on a baking sheet and lightly toast for 5-7 minutes until golden and crispy.
  • Once out of the oven, rub the toasted bread slices with a raw garlic clove.

Assembly

  • Spoon the tomato and mozzarella mixture generously onto each slice of toasted bread. Arrange them neatly on a serving platter.

Serving

  • Drizzle remaining olive oil or balsamic vinegar on top if desired, and serve immediately for the freshest taste.

Notes

Store any leftovers separately in an airtight container for 1-2 days. Assemble just before serving to maintain bread crispness.
