  • 1 pound baby carrots or regular carrots, peeled and cut into even-sized pieces Use baby carrots for convenience or regular carrots for more flavor.
  • 4 tablespoons unsalted butter Can substitute with plant-based alternative for a vegan option.
  • 3 tablespoons honey Maple syrup can be used as a vegan substitute.
  • 3 cloves garlic, minced Fresh garlic enhances the flavor.
  • to taste Salt and pepper Adjust seasoning to your preference.

Preparation

  • Preheat your oven to 425°F (220°C).
  • If using whole carrots, peel and cut them into even-sized sticks. Baby carrots can be used directly.
  • In a small saucepan, melt the butter over medium heat. Stir in the honey and minced garlic until well combined.
  • Place the carrots in a large bowl and pour the honey garlic butter mixture over them, tossing until evenly coated. Sprinkle with salt and pepper.

Roasting

  • Arrange the carrots in a single layer on a lined baking sheet. Roast for 20-25 minutes, stirring halfway through, until tender and golden brown.
  • Remove from the oven and garnish with fresh parsley, if desired. Serve warm.

Notes

To ensure even cooking, cut your carrots into uniform sizes. Store leftovers in an airtight container for up to 3 days, or freeze for longer storage. Reheat in the oven or skillet to maintain texture.
