Coffee Creamer Base

  • 1 cup milk (whole or any non-dairy alternative)
  • 1 cup heavy cream (or a non-dairy substitute for a lighter option)
  • 1/4 cup pumpkin puree (pure pumpkin, not pumpkin pie filling)
  • 1/3 cup sugar Adjust based on sweetness preference
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice Or combine 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1/4 teaspoon ginger

Preparation

  • In a medium saucepan, whisk together the milk, heavy cream, pumpkin puree, and sugar over low heat. Stir until the sugar is completely dissolved and the mixture is smooth.
  • Next, add the vanilla extract and pumpkin pie spice. Continue to stir, allowing the mixture to warm gently but not boil.
  • Once heated through, let it simmer for about 5-7 minutes. This will help the flavors meld together beautifully.
  • Remove from heat and let it cool slightly before pouring the creamer into a glass jar or an airtight container.
  • Store in the refrigerator for up to 1 week.

Notes

Give it a good shake before pouring as the pumpkin may settle at the bottom. You can freeze the creamer in ice cube trays for later use. Thaw them in the fridge overnight or microwave for a few seconds.
